This mansion was the first 6 star luxury private resort catering to Royalty, Presidents, Sheiks and celebrities for many years.

As owner/operator John purchased the original St. George Rugby Union Club. He restored and extended the building into a very successful Entertainment Complex. Mac Mahon's Manor boasted 4 themed Las Vegas Cabaret Shows a year over 7 years. These shows were then exported around the world. After 37 successful years, the company currently choreographs and produces a multitude of shows on board many cruise ships. Mac Mahon's Manor also boasted the intimacy of it's Fining Dining restaurant introducing a new culture to Sydney's cuisine providing full gueridon and flambe service, open log fire, crystal glass and silverware, lace table clothes the perfect surroundings for a candle-lit dinner with the opulence of the grand piano playing softly in the background. John purchased these broad-acres west of Sydney as his first family home with the vision to sub-divide the land into individual housing blocks. After 11 years John sold a portion of the land to the N.S.W. State Government Land Commission who developed a fully integrated community. John called the new project Minchinbury Estate after the original Champagne grape grown on the land by Penfold Wines over a century ago.

One of John's most ambitious roles when he was only 27 years old.John was head hunted for the position of General Catering Manager for the Sydney Opera House by an English company Sutcliffe Catering (now Spotless Catering) John delivered the expertise and hospitality knowledge from previous years of trouble shooting many Clubs and International Hotels in Sydney. The Billabong Restaurant and Function Rooms of the Sydney Opera House employed over 200 permanent and casual staff. John's role as General Catering Manager included -- Financial planning, managing budgets - Controlling expenditure - Maintaining statistical and financial records - Setting and achieving sales and profit targets- Analyzing sales figures and devising marketing and revenue management strategies- Recruiting, training heads of departments and monitoring staff- Ensuring events and conferences ran smoothly- Carrying out inspections of property and services- ensuring compliance, health and safety, and other statuary regulations

As apprentice Chef at QANTAS he was awarded numerous GOLD, SILVER and BRONZE awards including Australian Apprentice of the Year competing against other International Hotels apprentices for innovation and presentation.QANTAS saw John as an ambitious and self motivated individual. The Executive Chef, Sam Babici rewarded John for his efforts by inviting him on board the first maiden flight for the 1st QANTAS 747 Jumbo jet to fly to Singapore.
