We were the largest producers of heirloom, poison-free vegetables in Nye County, Nevada. With an emphasis on the rare, eclectic, and delicious, we provided Nye County with fresh, poison free produce year-round, and participated in the senior nutrition program to help low income seniors receive assistance in being more healthy and living longer.

Upon Leaving Chef Mavro, I dove into the challenges of creating an award-winning wine list and Charcuterie/Salumi selection, along with educating staff in the finest of service standards, as well as educating them on our incredible wine selection. Two of my former staff discovered that they had passion for wine, and I assisted them to move forward to becoming Sommeliers in their respective careers. With an emphasis on wine pairing, and eclectic, exciting wine and beer choices, Il Lupino quickly became one of Honolulu’s most talked about restaurants.

At Chef Mavro, we offered a Prix Fixe Menu, with each course paired with wine. I had the honor of being part of the team which elevated Chef Mavro from 4 diamond status to 5 Diamond status, as well as being the only person in Chef Mavro history to receive a +1(for sommelier knowledge) on the AAA review. We won consistent awards, as well as being the only 18 point, 3 toque Gayot rated restaurant in the state of Hawaii. My experiences here in learning about food and wine pairing have changed my life, and will continue to shape my view of food and libations forever.

With one locations near the Las Vegas Strip, and one location in the prestigious Lake Las Vegas, we had the finest selection of cigars, extensive wine cellars, and a long A-list of clients and guests. Celebrities, both local, and worldly, frequented our locations often, and it was here that I began my lifelong passion for great wine, cigars, and scotch. Managing two locations was always challenging, and forever interesting.

Starting as a cook, I rapidly made my way up the ladder with PT's. I began bartending soon after I turned 21, and spent many years with them as a bar manager, until my passion for wine led me on another path.
