My name is Jose Requejo Chang, and Im a Chef with 13 years of experience in the restaurant industry.I have a diploma in restaurant management from Le Cordon Bleu University in Peru, where I excelled with high grades, particularly in the menu engineering course.As an Head chef at Nagoya restaurant, I implemented control formats (daily and monthly stock control of products, waste management, product yield, ingredient lists and requirements, etc.), as well as standardization, quality control, and costing of each dish on the menu.I also have experience as a Nikkei cuisine teacher at a Cetpro certified by the Peruvian Ministry of Education, where I had 43 students under my supervision.As an Head chef, I was responsible for a team of 10 collaborators, whom I instructed and trained in nikkei cuisine, elevating their productivity in their respective areas as well as in the company, improving camaraderie, work environment, and helping them enhance their skills.I am a committed and innovative person, standing out in every restaurant as a proactive collaborator always willing to support and solve problems.
