My name is Chef Jose Ruiz. I was born and raised in a small town in Michoacan, Mexico. After graduating high school in Mexico at the age of 16, I was sent by parents to live in Chicago, IL. It was here that I began my 15 years of culinary experience. I started at the bottom as a dishwasher and worked my way up holding various restaurant positions. I feel this gives me an advantage for my leadership and teamwork skills. When it comes to my cooking philosophy, I believe in using local, all natural and organic ingredients to achieve the freshest tasting, yet elegant dishes. I like to turn old family recipes into modern works of art. I have experience in Italian, Tapas, Indian, Mexican, Chinese and French Cuisine. This comes from my work within various Chicago restaurants, my Latino culture and styles I've learned while attending Culinary Arts school at Kendall College here in the city.Food is art, and the plate is my canvas.
