I was recruited by Two Fifty Square to add food to what had previously been a business limited to serving quality coffee. I was responsible designing the kitchen, creating the menu, selecting produce and suppliers, implementing food safety protocols and managing accounts. The project has been highly successful, increasing the business’s customer base and turnover and may soon be extended from daytime to evening dining. It has also provided me with an invaluable opportunity to take responsibility for every aspect of the operation of a commercial kitchen.

This position as a private chef in a luxury chalet brought new challenges with each new group of guests. Working in an open kitchen the position required plenty of innovation and intuition, good communication skills, tact, understanding and good humor.
