Responsible to prepare dessert items for various retail outlets on property according to Hotel recipes. Plating of banquet desserts. Displaying buffet desserts Was awarded the Certified Pastry Culinarian status with the American Culinary Federation upon completion of my pastry apprenticeship and successful practical testing. Also awarded the Tournant pastry cook position because of my responsibility and leadership abilities in the Hotel at this time.

Trained as a cook in banquet breakfast cooking, sauce and roast, garde manger, and pantry for 1 year. Additionally, spent 2 years training as a line cook in six different restaurants on the Broadmoor property. In my third year, I worked as a line cook in the 5 star dining restaurant on the Hotel property. Also responsible to teach 4 or 5 classes a year in a classroom setting on knife skills and safety and sanitation to new employees.Was awarded the Certified Culinarian status with the American Culinary Federation upon completion of my apprenticeship and successful practical testing.
