Highland Boundary is a family run botanical drinks business.With a passion for quality and sustainability, and rooted in their community in the Scottish Highlands, Highland Boundary create and distil novel spirits flavoured with handpicked, local botanicals including flowers, fruits, leaves and berries to make spirits and liqueurs. Using different techniques, processes and time periods to maximise flavour capture and quality, Highland Boundary supply their Award winning drinks to prestigious restaurants, bars, hotels and retail. Flavours include Birch & Elderflower, Larch & Honeysuckle and Birch & Sloe. With the environment being at the core of the business, Highland Boundary harvest sustainably, only use recyclable materials in bottling and packaging and have renewable energy sources. Their purpose is to enhance Scotland’s reputation for high quality food and drinks production with the inclusion of modern, innovative and impactful botanical spirits. In my present role, I work closely with Highland Boundary, offering strategic advice and implementing initiatives to enhance sales and drive business growth.

Quirky Chocolate, headquartered in Edinburgh, is a boutique chocolatier renowned for its unique blends inspired by the rich flavours of Scotland. Their flagship Tartan Chocolate bar collection has swiftly emerged as a contemporary emblem of Scottish heritage.Driven by a desire for innovation and craftsmanship, Quirky serves a diverse clientele, spanning B2C, B2B, wholesale, and partnerships with esteemed establishments such as the Waldorf Astoria Caledonian Hotel, The Old Course, Historic Scotland, V & A, Bombay Sapphire, Diageo, and Marie Curie UK. Committed to ethical sourcing, all products feature Fairtrade cocoa, and the brand proudly introduces new lines that are entirely plastic-free.In my current capacity, I collaborate closely with Quirky Chocolate, providing strategic guidance and executing initiatives to optimise sales, streamline management processes, foster business expansion, enhance production efficiency, devise impactful marketing strategies, and bolster financial management. Through concerted efforts, these endeavours have resulted in substantial increases in turnover and profitability. Notably, my involvement played a pivotal role in securing a £50,000 Grant from Innovate UK, aimed at furthering productivity and growth initiatives for Quirky Chocolate.

I founded and owned Chamomile Sanctuary, an opulent beauty retreat nestled in Edinburgh's vibrant West End. Established in 2010, Chamomile quickly garnered acclaim, securing prestigious awards such as Best Beauty Salon and establishing itself as a premier spa destination. Offering a comprehensive range of beauty essentials and indulgent spa treatments—including massage and facials—Chamomile catered to discerning individual clients and also specialised in hosting exclusive events for private gatherings and corporate functions. In April 2022, I orchestrated a successful sale of the business.
