My research project explored the effect that degree of cooking has on different properties of red meat. My research was the first to quantitatively determine the relationships of doneness and internal colour (L*a*b*) with properties such as tenderness and toughness of meat (using a texture analyser). I also looked at the effect of high pH ("dark-cutting" meat) on sensory properties with increased level of doneness.This project involved researching and designing experiments which then required innovation and optimization of new technologies and formulating operating procedures for the Meat Science Lab and the Sensory Lab at the University of Melbourne.

During my placement at Simplot I was able to participate and contribute to different projects within the R&D team. I was exposed to a high profile evaluation of technology: from pilot plant scale up validation of the technology, through to sensory testing of the product designed for the technology. I was able to see new processing equipment evaluation at the pilot scale, new product development at the factory, and new product development at the pilot scale. Additionally, I participated in a first discussion on a technology road mapping opportunity, helped to research new technologies that might interest Simplot, and developed a high level of understanding business metrics.

As a research assistant I was in charge of the planning, execution, and analysis of research projects. I worked on many different projects exploring areas such as immunology and physiology. I was required to learn new techniques and troubleshoot where necessary to ensure the success of the experiments.

Taveuni, Fiji

The internship involved a 6-week cultural immersion and reef-check program, which required diving twice a day to assess the quality of the marine park and designated fishing grounds for the village in Taveuni. I was required to work independently but also collate results with other interns and communicate the results of the study to the village and Consulting company.
