Main responsibilities:Training of staff and managing a team of 10 with the general manager.Running shifts, including managing customer complaints, upholding company standards, cashing up, unlocking and closing the cafe.Making coffees (barista trained) and running a till system.Filling out audits, stock takes, costings and any paperwork applicable when the general manager is not available.Counselling, mentoring and disciplining staff.Kitchen checks to ensure all areas of the kitchen are clean and to spec.Kitchen work:Maintaining kitchen standards and working within the team to produce products.Prepping meat, vegetables, baked goods to spec.Keeping the kitchen prepped, clean and organised.Running the hot food section or cold food section over the busy lunch period.Completing all kitchen paperwork including fridge temperatures, prep lists , hot holding temperature and cleaning schedules.

Preparing cakes/deserts/pastry etc to product description.Quality control and stock control.Cleaning everything to spec.Running the baking section, pass or sandwich section.General prep eg vegetable prep and meat prep.Training of new staff.Costings.
