Medical Nutrition Therapy - MercyOne Medical Center -Provided medical nutrition therapy, education, and counseling as appropriate to encourage optimal health outcomes.-Designed, implemented, and charted patient assessments, diagnoses, interventions, along with monitoring and evaluation criteria based on the nutrition care process from the Academy of Nutrition and Dietetics.-Developed and explained education materials to help patients understand dietary recommendations and complex nutritional concepts.-Assisted in the transition to the International Dysphagia Diet Standardisation Initiative (IDDSI) including testing of food for compliance and menu development.Foodservice Management – Urbandale Community School District -Designed standard operating procedures to provide safety, efficiency and cost-saving measures; including for viral pandemic response, remote student meal distribution, new hire orientation, product monitoring to reduce food cost and food waste, and procurement for the inclusion of local foods. -Conducted tray, quality, food waste, safety and sanitation audits.-Performed an allergen analysis on menu items, updating the menu and POS system to correctly reflect allergens. -Assisted in reimbursement and budget related to NSLP, NSBP, SFSB, and pandemic response.-Aided in the development of a consistent interview process to encourage optimum staffing. Community Nutrition – Iowa Department of Public Health -Evaluated current policy and provided groundwork to encorporate federal regulations and facilitate better staff understanding.-Converted federal regulations to appropriate policy and procedure documents relating to income eligibility, nutrition risk screening, residency verification, and other certification processes. -Participated in WIC breastfeeding support and clinical assessments.-Observed WIC recipient focus groups and aided in the development of action steps for the improved inclusion of male caretakers.
