As a USDA, Food Safety Inspection Service Food Inspector (GS-5) examined food animals in privately-owned meat plants to ensure safe-wholesome product to the consumer. Protected the public’s health by ensuring that the carcasses and parts that entered commerce were wholesome, not adulterated, and properly marked; meaning any carcasses or parts that were unwholesome or adulterated, and thereby unfit for human food could not enter commerce. Participated in ante-mortem and post-mortem inspection of red meat animal. Verified that the establishment was meeting humane handling requirements. All animals that were on the premises of the establishment were to be handled humanely. To be aware that the establishment was required to identify those animals that needed ante-mortem inspection and to do so in a manner that would allow FSIS to conduct and document that ante-mortem inspection had been performed (e.g., through use of a pen card or drive sheet). This documentation was necessary to facilitate verification of the slaughter class (subclass) and number of animals presented for ante-mortem inspection and to reconcile that number with the number of animals slaughtered. Conducted ante-mortem verification with the physical help from establishment workers from a safe and suitable vantage point. Passed slaughter livestock that did not show signs of diseases or abnormalities and fit for slaughter for human consumption. Used organoleptic methods to detect diseases, abnormalities, and contamination of carcasses and parts. These methods included: 1. Sight – observing a disease lesion (e.g., abscess, tumor, injection site lesion); 2. Feel – palpating (e.g., abnormal lump in tissues, abnormal firmness in an organ); and 3. Smell – smelling (e.g., the urine odor of uremia, odor of a broken abscess, chemical odor). Maintain sanitation procedures. Serve as a valued member of a dynamic team that ensures the product is fit to eat and compliant with Federal laws.
