Kay worked with the Circle K Company (now owned by Alimentation Couche-Tard) in Phoenix, Arizona, and handled c-store foodservice category management, franchise brand negotiations and program testing. Her ingenuity and leadership provided foundational development for the foodservice categories at Circle K. Earlier in her tenure at Circle K, Kay worked in field operations and marketing.

Las Vegas, Nevada Area

While at 7-Eleven, Kay Segal held positions of Operations Field Consultant and Jr. Buyer in the Southern Nevada region. She assisted franchisees with maximizing their profitability, providing counseling services. She learned category management principles, applying them to her franchise store group and using those skills as a junior buyer.

Position held was as a Field Investigator II. Kay performed inspections of various establishments in the Clark County area. Kay also assisted with plan review, ensuring NSF standards were properly incorporated into plans.

Kay received post graduate training from Sky Chefs, a then leader in the airport restaurant and airline catering industry. Within her roles as trainee and airport restaurant supervisor, Kay applied food safety standards as well as quality assurance standards during quality checks. She also managed airport restaurant facilities, in Portland, Oregon, Ft. Lauderdale, Florida and Dallas, Texas.
