I regularly teach four courses for Embry-Riddle Aeronautical University: Technical Report Writing, Business Communication, English Composition, and Study of Rhetorical Theory. The online courses are writing-intensive and have an average of 19-25 students per class. Technical Report Writing prepares students to write documents that reflect industry-based standards. Students learn to conduct research, write grants, and provide proper documentation.Business Communication teaches students to become effective business communicators. Topics in oral, written, nonverbal and intercultural communications are covered. Students research, prepare, and deliver a job application, professional brand presentation, and formal report in a convincing manner.English Composition teaches the principles of using writing for thinking, as well as a tool for expressing ideas. Students learn to think critically, research ethically, and express themselves efficiently.Study of Rhetorical Theory covers the techniques of persuasion through the history and theory of rhetoric from Ancient Greece to the digital age. Students learn to identify fallacies in the media, equipping them to critically evaluate the discourses around them.

I teach five different academic writing courses at the University Writing Program (UWP): Professional Communication, Professional Communication for Engineers, Rhetorical and Academic Research, Writing Academic Arguments, and Writing in Journalism and Communications. I teach students how to write effectively and clearly, and work in collaboration with others. Students learn how to master a variety of genres important to their academic disciplines (research reports, proposals), as well as individual careers (resumes, application letters). Students develop a foundation of skills that equips them to articulate effectively in their remaining academic courses and beyond into the workplace.

I designed and teach a course in Food, Media, and Culture for the College of Journalism and Communications. The course develops students' writing skills for a career in food and media. Students practice writing a cookbook analysis, restaurant review, interview profile, food magazine pitch, food film analysis, and food memoir. Connecting food texts, identity, and writing leads to the development of each student's writing voice and sense of self-expression as defined by food. By finishing the course, the students have a foundation that prepares them for a future in food writing.

My engagement added richness to the research landscape in the School of Humanities (SoH) and led to fruitful collaboration with faculty and staff. A grant proposal developed the foundation of a student research journal for introducing students to a research culture fostered by the SoH. The flagship product will be the Pioneer Road Journal of Undergraduate Research, published annually and open to the 4,700+ students enrolled in NTU's SoH from first-year to fourth-year. This will be the first undergraduate research specifically for NTU SoH students. I wrote an article on Singapore and the United States on culinary diplomacy with faculty at NTU. The article is interdisciplinary, combining my strengths in language and food policy with their strengths in language and communication. The publication has led to ongoing and productive projects in food security and sustainability, both priorities for NTU and Singapore.

I performed linguistic consulting and pedagogy research and related writing services for a dual-language learning software company. I helped build a research-based vocabulary database for Spanish-English learners.

I worked as an online writing instructor for Pearson Smarthinking, an online tutoring and writing service. I helped students with their writing (all subjects), research and documentation, thesis statement, paragraph development, APA formatting, and content development
