Master student in the Food Science and Technology department. Studied the effects of light oxidation on milk in various packaging and under LED and fluorescent light. Research determined which packaging is most effective in protecting milk from light oxidation while analyzing the impact of LED and fluorescent has on oxidation which therefore affects the flavor and consumer acceptability of the milk. This research also utilized electronic nose technology to form a standardized system for testing milk volatiles which will relate to amount of light oxidation of milk.With my research project I managed 15-20 employees working with sensory panels and various tasks of the project. I organized weekly schedules and oversee the project as a whole; planning, designing, organizing, and supervising the project. I recruited and organizeed up to 128 panelists per panel and analyze any data from the panels. Along with my project I have been involved with various sensory panels such as affective panels on wine and steak and discrimination milk studies with other researchers where I either organized panel, participate in preparation and sensory panels, and/or analyzing the data.
