Currently in charge of all dairy operations of around 17mm in sales of retail pack sizes of 48 ounce scrounds, pints, quarts and stick novelty products, 2.5 and 3 gallon bulk lines. Handled production of a $5M (8M in 2007) in sales gelato manufacture with over 180sku's. Managed staffing of 14 full time summer and seven winter employees. Handled production maintenance, quality control, bacterial counts, product and supplier specifications, internal and external audits including CDFA and NSF/SQF, and Kosher inspections. Managed sewerage disposal to ensure compliance, reporting and testing of effluent into the sewer. Handled local distribution in Northern California, including three delivery vehicles two full time and one part time delivery drivers. Oversaw budgeting and cost control, updating and maintaining the cost sheet, for all products (including co-manufactured) and uploading it into the master budget. Provided research for new flavor development, revenue enhancement issues and new product development for co-packers. Handled approval of all secondary sources of supply and substitution of discontinued raw ingredients. Designed, built and managed an ice cream factory, which included 800 GPH mix department and a 2000# ammonia refrigeration system. Provided quotes, bids and supervised contractors, and sub contractors through start up. Managed and implemented compliance with the California Accidental Release Program for the refrigeration system.Key Highlights:Successfully brought in several co-manufacturers including several lines from Alta Dena and started production of ice cream mixes for other ice cream manufactures, dramatically lowering manufacturing costs.

Acted as plant manager for a 17 person union production of yogurt and whipped topping facility. Handled maintenance, and provided solutions to bacterial and personnel issues. Implemented reduction production losses and increase in productivity by reducing down time.
