In my role at Grit Hospitality / KC Pie, LLC, I've led our teams through significant transformation including the following:• Oversaw the end-to-end efforts to open over 20 restaurant locations across four brands at peak operations• Responsibilities including business planning and financing, real estate, facility and equipment layout, sourcing and account setup, staffing, training and marketing• Manage a dynamic portfolio of restaurants across five brands in the Kansas City Metro and surrounding markets, peaking at 15 concurrent locations, and delivered system-leading cost control performance in two national restaurant concepts• Designed and implemented company operating structure, including personnel systems and incentive structures, KPI reporting regiment and management accountability systems, recruiting and training strategies, marketing planning and execution, annual budgeting, cash flow management and financial reporting• Launched in-house consulting practice through Grit Hospitality within the food and beverage industry providing restaurant operations, multiple-location management, consulting, and development services• Spearheaded full-scale concept development for three multi-unit restaurant concepts, including proforma modeling and analysis, branding, menu development, facility and equipment design, concept operationalization, supply chain, staffing model and systems infrastructure design• Led businesses through multiple complex challenges, including COVID-19 pandemic restrictions and implications, labor and commodity cost inflation, non-traditional revenue stream development, acquisition analysis and evaluation, divesture of underperforming locations, and others
