Who am I?I would describe my self as the little kid, who grew up on Gordon Ramsay and Keith Floyd.Many a-days through normal life, these picturesque land scapes and bright-colourful foods crept in. (It's always something I've been interested with).I've worked in kitchens, but cocktails are where my love lay. From food to beverage, if there's flavour, I must try it.If I can capture and develop the ore we all have for taste; I know I have done my job right. (That is what gives me satisfaction).Pressure for me, is like a moment. And in that moment you decide to sink or swim. I only ever chose the latter. Don't get me wrong, there were times I got 'it handed to me', but I took it as it came; and saw it as a chance to re-evaluate and learn how I could do better. A quality I hold dear to me.Challenges were met with a smile, complaints, a "Hello, how can I help"?A long time ago, I was told. "Being behind a bar, is being on stage. It is all a show, and you must perform." Sounds like something Toby Cecchini would say, staying within my self so deeply, it is now a fundamental I take with me; everywhere I go.The customer pays the bills, wages and keeps ice in the shaker. I think people forget this; and over time the experience drops as a result. That's why guest experience is also another fundamental of mine.When making projects, training staff, entertaining guests. Seasonal menus, lures (e.g short burst videos of bar content, to get people in the mood),• Training to be a duty manager, so I would be in-charge of the hotel and departments (e.g reception, parking, house keeping, and guest relations) during late service; as well as FnB.• This training was put into good practice when I respond to a few medical emergencies and stopped a flood on the 3rd floor, it had spread to the 1st.

I treated this site as a personal project, a vast amount of time and energy was put into this to get a consistent, highly efficient bar from the staff to deal with the new on-site demand. This premises had been closed for a considerable amount of time and had caught the eye of an investor. After a £750,000 refurbishment, a handful had been selected and trusted to train a 50 personnel team (with only 10% of that total having previous experience). That was when I was reached out to be the bar manager.
