For sushi I have to remember all the platters and the ingredients inside each of our maki rolls. There’s only one runner for the sushi bar so we expo and run the sushi by ourselves. I also had to learn the Japanese and English names of the fish so when I served the sushi I present each fish with the Japanese name then the English name. -
