Award-winning vegan chef and pioneer in the plant-based movement, Kristen Thibeault has a passion for the classic French culinary style and a natural flair for creating food that is healthy and delicious. Extensive time in Paris comes through in what Thibeault has coined her vegan fusion style of cooking- Stealth Health.As the Executive Chef of Nibll, a nationally-acclaimed high performance catering and meal delivery company, Chef Kristen creates seasonally inspired, locally sourced plant-based cuisine for an exclusive, high-end clientele that includes celebrities, professional athletes, and business professionals. “I take my inspiration for the fresh farm-to-table weekly menus we prepare from many places.” notes Thibeault. Chef Kristen learned about the power of plants and sustainability from the late founder of The Body Shop, Anita Roddick, while sitting across from Dame Roddick at her kitchen counter in Littlehampton, England. Years later, a magical macrobiotic dinner with actor Richard Gere and Professor Robert Thurman, discussing Tibetan Buddhism and the principles of non-harming would open my eyes to many of the principles Thibeault employs today. At the core of Chef Kristen's philosophy “eat as if your life depends on it,” and what defines Thibeault’s life work are lessons learned while working with her mentor Horst Rechelbacher, founder of Aveda and co-founder of Business for Social Responsibility and The Social Venture Network. In 1995, while working at AVEDA, Thibeault helped Horst launch an organic nutritional company, Intelligent Nutrients, worked on special projects with Deepak Chopra, and opened the Aveda Wellness Retreat in Osceola, WI. She also served as Director of Global Education and taught numerous retreats and workshops including The Business of being for SELF Magazine. During her tenure at Aveda, Chef Kristen began her deeper journey into nutrition, Ayurveda, vegan cooking, and the power of food to heal. A double cancer diagnosis at the age of 41 laid the final bricks on her path. These breathtaking moments, both blessed and challenging, left their indelible mark on Kristen’s life and ultimately lead to the creation of Nibll. Nibll now operates culinary centers in San Francisco, LA and Las Vegas focusing on changing the way people think about healthy food.Kristen holds her culinary degree from Le Cordon Bleu and is a certified sports nutritionist. She studied nutritional science at Stanford University.
