Ocean Prime is a restaurant belonging to Cameron Mitchel. Finer dining seafood and steak house. After leaving the hyatt i needed a place to hide and collect my thoughts. Figure out if i should continue the fight for chef-hood or just go for the money and switch back to the front of house in a tippped position. I played in their dishpit. Organised operations for a smoother more fun work environment. Occasionaly the chefs would call upon my culinary assistance in the prep kitchen. When i decided to leave the kitchen life after a year of meditation, my chefs were not too pleased and opportunity for my transition to their FOH staff was not an urgency to them. So i moved just two stop lights up the road to Dragonfly still within the finer dining community.

I cooked under head chef Luka from Italy. Started on pantry and work over to fry then pizza. After a while i heard the morning prep crew needed help and so i switched shifts. The Hyatt then offered more money and more training and so i had to move on.

After cook III, then cook II, then sue chef. Thats how the Hyatt did it. I worked under every chef in that hotel and at every kitchen. I could learn quickly and assist each restaurant in times of need. My assigned kitchen was the seafood restaurant and the pool bar & grill.

Went to benihana applying to e a sushi chef. Instead they felt i would be a better server. Gave it a shot and made good money serving hibachi tables. Occasionaly i would be asked to assist the sushi lounge servers. Started out at the international drive branch then ended at the downtown disney branch.
