Ranked at 14th in the World overall for service.I was responsible for all aspects of the resort operations including front office, housekeeping, food and beverage, maintenance, human resources, guest services, etc. and reported directly to the Managing Director. I directly oversaw 208 full time employees and was responsible for an entire inventory of 163 rooms. This included suites, villas and estate houses. Jumby Bay is an exclusive private island located just off the coast of Antigua. The resort epitomizes refined Caribbean luxury and caters primarily to well-traveled, high-profile and extremely discerning guests.
Resident Manager
This World-class private island resort consists of 16 villas and entertains a maximum of 40 guests with a permanent staff compliment of 120. My role as Resident Manager was to directly oversee all hotel operations including: food and beverage, front office (including concierge, boutique and reservations), housekeeping, spa, purchasing and stores. In the event of the Managing Director’s absence, I would also oversee engineering, ecology, agriculture, administration and marina. My main focus was guest satisfaction and I welcomed and bid farewell to each and every guest. Hosting cocktail parties, dinners and special events formed a large part of my job function.
Eam - F&B
The hotel comprises 32 suites, two restaurants, pool bar, full beach service, room service, Thalasso spa and small banqueting. I was directly responsible for 25 staff members and supervised the entire food and beverage department. I compiled the menus (which changed daily), wine list, cocktail menus, cigar list, handled all staff issues in both the kitchen and front of house including training, payroll, schedules, disciplinary action, recruitment and managed the department’s budgets, purchasing, cost control and margin protection.

The Western Cape Hotel and Spa, a member of Starwood's Luxury Collection, is South Africa’s only six-star hotel and a marvel of design. State of the art kitchens and redefined concepts make it an exciting place to work. I oversaw the Jamani restaurant, the hotel’s busiest outlet serving breakfast, lunch and dinner. I also oversaw the main production section of the kitchen, which included food preparation for the golf clubhouse, room service, banqueting and staff restaurant. I was also directly responsible for 21 staff members. This hotel has recently been awarded 5 stars - Diamond by the American Academy of Hospitality Sciences.

This hotel has recently changed owners and is now operated by the Red Carnation Group. The hotel is now called The Twelve Apostles Hotel. Located on the Atlantic seaboard, the hotel has 70 suites, two restaurants, 24 hour room service and banqueting / conferencing facilities for 120 pax. I was employed primarily to facilitate the conceptualization, re-branding and re-opening of the hotel’s dining concepts
