Danish Food Critics nominate each year the best dishes for “Årets RET”, tasted in connection with the review visit. The long list of memorable meals narrowed down to 15 dishes with winning potential. They are divided into three categories with five dises from each category: Sea (everything from sea kingdom), Land (all meats and green dishses) and Sweet & Cheese.These 15 dishes and their competent chefs will compete in the final tournament. The criteria for assessing the dishes are taste, its idea and its appearance.A special Danish flavor can be honored, but it does not give extra points to compose a dish consisting of only Danish ingredients, if there is also a more thorough idea of the dish. It skilfully and simple appreciated, it technically accomplished as well. They can honor unique compositions and cooking techniques, even if one or more originating from other food cultures than the Danish. There should be an essential element in dish - except the chef's work - that justifies the focus on exactly this dish.Each year at the finals the nominees shall be judged by a panel of members of the Danish Food Critics.
