• Daily grade lobster according to sizes and Capture data on grading.• Conduct daily stock counts and communicate to operations.• Prepare raw material and lobster according to production recipes• Follow SOP's in accordance to preparation process, i.e. drowning, chilling, wrapping, freeze• Prepare live shipments. Ensure live shipment and meet quality standards, ensure shipments are dispatched in accordance to SOP's• Mastering of products and ensure applicable documentation are completed, provide completed files to production supervisor.• Participate in stock counts
