CurrentTerreux CellarpersonMay 2016 – Present• Monitor fermentation in both stainless tanks and barrels by running gravity, pH, and cell count readings including multiple yeast sizes and shapes from mixed fermentations• Assemble transfer lines with future needs in mind (convert for re-circulation, disconnect for cleaning, etc)• CIP, inspect, and sanitize fermentation vessels, transport tanks, and bright tanks• Maintain PRV, spray-ball, and valve functionality by replacing gaskets when necessary• Pitching yeast to fermentation vessels and inoculating barrels• “Dry-hop” tanks and barrels with hops, fruit, and other ingredients• Harvest yeast for future fermentations by doing accurate cell counts • Prepare barrels for both fermentation (steaming, ozone rinsing, hot rinsing) and aging post fermentation (steaming, hot rinsing, inspection, purging)• Maintain barrel integrity and seal leaks both after filling and once empty• Prepare finished beer for bottling by carbonating to proper CO2 levels using a Gehaltemeter• Participated in multiple barrel tasting sessions and blending sessions for finished blending plans• Strategically stage equipment and items within a confined work area with regards to safety, ease of access, and the needs of that space for the rest of the day’s work• Pitch and prime beer before packaging when required by style• CIP and sanitize Meheen packaging line including bringing beer into filler for packaging• Setup and run labeler and box label coder for Terreux packaging• Maintain packaging paperwork including digitized versions for record keeping• Setup and use keg lines to keg finished beer Packaging Team MemberMarch 2015 – May 2016• Work various locations on a Krones: Kosme packaging line• Maintain paperwork including keg collars, keg stickers, and keg caps• Constantly aware of quality issues ranging from glass defects to machine calibration
