my role here was to engage with sushi operations inclusive of hoso maki,futho maki,temaki,nigiri and sashimiDaily request sheet updating fish preraring cleaning,cutting,portioning according to the food hygienic standardsduring the hot kitchen operation when the absence of the department chef my duty related to take the part of the hotkitchen crew and prepare sauces (yakithori,teriyaki,karage) also preparing yakithori varieties and okonomiyaki,tempura etc:
