• Monitor the performance of all departments, particularly food and beverage through the efficient maintenance of control procedures established by management Report to Accounts Supervisor/Assistant Financial Controller.
• Maintain database for Materials Control as well as being the champion for the system. Control the Credit Reports related to F&B stores and others. Responsible for the Core Reports which is produced every month end.
• Liaise with purchasing team as well as chefs to ensure accurate costing for food and beverage.
• Ensures stock is stored securely and in the correct condition
• Responsible for the accurate preparation of all paperwork associated with the movement of all food and liquor stocks to outlets
• Food and beverage performance monitoring through analysis of daily food covers, sales and cost reports

Responsible for all aspects of planning and supervising conference and banquet operations, including: arranging logistics and supervision of the operation team to ensure meetings, events and banquets (of up to 4 to 400 delegates) are delivered to the highest standards and meet client needs.Lease, meet and great with the customers making sure all.

• Supplier Quality – Responsibility and accountability with the appropriate authority to correct errors in any of the suppliers who are providing components to the production facilities. Taking responsibility to.

• Training Needs Identification – Identify weaknesses in any part of your process. Create a shared approach with supervision to leverage best results.
• SOPs – Creation, control and adherence.
• Packaging – cost, process, rationalisation etc. To minimise cost and improve product perception. Pool resource with the supplier(s) to create a rationalized range of packaging (cost down)
