Development of a new procedure to prepare samples for further analysis in a differential scanning calorimeter (DSC). Switching from controlling the water content in the DSC samples to control the water activity, by incubating the samples in a controlled atmosphere, to avoid shortcomings. Kinetic parameters of the inactivation reaction are obtained and used to compare the performance of enzyme formulations during processes where may there be thermal inactivation, such as drying. The quality of the data is compared to those obtained with the current method.
