Title of Thesis: Production of Fungal Hydrogels for 3D Bioprinting and Cellular AgricultureGoal:The long-term goal of this study is to replace gelatin in hydrogels with fungal protein in a way that maintains or improves on texture, printability, color, and cost to produce. Objectives:1. Develop processes to create functional mycoprotein fractions from different fungal strains and evaluate their gelling behavior.2. Quantify the printability of mycoprotein gels in creating structured food precursor materials.Engaged in this project, my responsibilities encompass comprehensive literature reviews to formulate research protocols, the design of an innovative system, and the development of a novel product. This endeavor is thesis-based, culminating in the creation of a comprehensive written thesis and the subsequent thesis defense.
