As a sustainable regenerative farm supportive culinary arts instructor, I aim to provide a comprehensive and immersive experience for students to explore the world of food. Through a hands-on approach, students will learn the art of cooking while also gaining a deeper understanding of the food system as a whole. The class covers a wide range of topics, from basic cooking skills to naturopathic approaches to food, sustainable farming methods, and alternative ingredients in dietary trends. We also delve into the gut-brain connection and good bacteria through activities like fermentation. My goal is to prepare students for a diverse set of careers in the food industry, whether it be in food science, nutritional health, industrial food supply, or owning their own small business. We discuss what it means to build sustainable relationships with other participants in the food system, from farm to table. Whether you're a beginner or looking to expand your knowledge, this class is a valuable tool for anyone interested in the culinary arts. Students will learn how to use dry and moist cooking methods, wield knife skills, create mother sauces, explore fermentation, use alternative ingredients in paleo, keto, vegan, and diabetic diets, curate menus and recipes, bake, and explore flavor.
