As one of the managers at Criollo Latin Kitchen, Lee's responsibilities include training staff on restaurant and wine service standards, working with Aloha and RM software, opening and closing duties, cash balancing and accounting, payroll, and managing the floor during hours of operation. As the Bar Manager, he is in charge of maintaing a seasonal wine list and ensuring that the staff is knowledgable about our offerings as well as updating and refining the cocktail and spirit selections.

As server and sommelier at Cuvée 928, Lee not only manages his tables professionally and effectively by guiding customers through the wine list and menus, but also aids fellow servers when their clients have questions about our cellar. His knowledge and honesty shows, as his diners always leave happy with their decisions regarding food and wine, and when asked-pairings.

As Supervisor at Montagna and Element 47, Lee has completed many training courses on Food and Wine for new employees. While employed by Aspen Skiing Company, Lee created tasting menus for new employees with eloquent menu descriptions, explaining how to articulate our complicated dishes. Duties included scheduling and payroll, interviewing, training, inventory control, marketing for special events, customer complaint processes, as well as handling disputes among employees.

Within the year that Lee was employed by Dickie Brennan & Co., he worked his way up from a back-waiter to one of our A-waiters. He showed mastery of all required duties and responsibilities and was reliable and timely. He was a great instructor for our new B-waiters, helping with demonstrations and verbal descriptions of new menu items.
