I am the Founder/Operator of Icely Done Drinks. We are a UK based company, and in our commercial kitchen and development lab, we prepare handcrafted, imaginative and delicious cocktail blends for those who aspire to sell remarkable cocktails quickly, consistently and without compromise. We’re also known for our frozen cocktail solution and we have machines available for event bars and licensed gardens/rooftops which can be supplied with the cocktail blends that we are producing.Away from frozen cocktails, we have a selection of tasty and versatile cocktail blends, which form the basis of remarkable cocktails that can be created in as little as 3 steps.

• Joined a small team at this Melbourne based specialty coffee roastery, cafe, and retailer• Developed an in depth understanding of coffee origins, growing, sourcing, trading and handling• Laid solid foundations in a wide-variety of coffee preparation/brew methods • Regularly cupping (tasting) with the roasters, helping to maintain the quality of coffee served• Frequently hosted public coffee tastings to help lead coffee bag sales and encourage subscription to coffee club (fortnightly home delivery of coffee), which I was regularly involved in coordinating

• Drink menu development including innovation and new concepts as well as the writing and costing of all new menus across ten UK and international sites.• Primary point of contact for the business owner, all members of senior management, site managers, head bartenders and all members of bar staff with regards to anything bar and drink related.• Required to liaise closely with all senior management and the business owner to identify targets and priorities, and then ensure that this information was relayed accurately to site managers and relevant personnel.• Monitor Head Bartenders in all areas of bar management, ranging from stock control to customer experience and quality control.• Bartender training across the Group including but not limited to the writing and marking of test material – both practical and theory based.• On site bartender development in association with Head Bartenders and site management. Training of all new management staff and Head Bartenders on stock taking procedures and bar operations.• First point of contact for all current and potential suppliers and in conjunction with the Finance Director working to secure best purchase prices for the Group.• FnB Shop - Project Management. Involved the development and initial implementation of the product, and adapting it to the needs and requirements of the Group. Training on the package was also an ongoing requirement.• Maintenance of pricing and stock databases on FnB Shop.• Production of materials relative to training and staff development, from FnB Shop manuals to GP and stocktaking manuals.• Required to provide bartender and/or management assistance at all sites when required.• Head Bartender appraisals (shared responsibility), bartender recruitment and disciplinary management in conjunction with site managers.• Maintaining a constant and in depth knowledge of the industry, key players, developments/trends and ensure that we continue to be seen as market leaders and trend setters.
