"Meadow Lark Farm Dinners are a celebration of Colorado's farmers and food artisans. From June through September, we set our table in fields and pastures, barns and greenhouses, around Boulder County. Our menus are inspired by the morning's harvest, and are prepared on-site in our mobile kitchen and on our wood-burning grill. We are driven by the belief that the rituals of the table hold great potential for building communities. By cooking uncomplicated food on local farms, right beside the rows of crops, we strive to draw connections among taste and place and season."

The Charlie Cart Project is a turn-key nutrition education program, including tools, lessons, training, and a compact mobile kitchen on wheels. The Project’s K-5 curriculum is aligned to Common Core and Next Generation Science Standards, and provides a strong foundation of cooking skills, in addition to an understanding of the connections between food, health and the environment.

The Farm Internship Program is a hands-on learning experience during which interns work alongside Italian farm staff to help run the diversified organic farm in rural Tuscany. This experience is an introduction to the various themes of Spannocchia including farming, agricultural tourism, sustainability, community living and Tuscan culture. Each week consists of 30+ hours of manual labor complimented by bi-weekly Italian language instruction, educational presentations, and bi-monthly fieldtrips to surrounding areas of interest.
