Royal Exchange housed a high volume brasserie, all day dining café, cocktail bar and a fine dining restaurant located in the courtyard and mezzanines of the iconic Grade I listed Royal Exchange building. Ability to host high capacity events for up to 800 people and two private dinning rooms for 20 and 28 people. Royal Exchange Grand café and Sauterelle turnover reached 5 million per year. Leading the team of 90 people I was responsible for all financial management and achieving revenue targets, talent development, health & safety, menu development, wine list and stock control.

Leading a team of 30+ FOH team I was responsible for the operational organization and seamless running of day to day operation of Bar and Brasserie department and private events of Coq d’argent. In charge of recruitment and training, payroll and rosters, achieving financial, customer service goals, and working closely with Executive head chef on the menu development.

During this time I was responsible for smooth running of the bar and brasserie service on 3 terraces and roof garden, overseeing the team of 30 and assisting the Bar and Brasserie manager in menu and cocktail list development.

Responsible for the improvement of skills and standards and product knowledge of the FOH team of 20. Organizing training sessions and menu descriptions, leading briefings and implementing high standards of food and beverage and customer service while running a day to day service of 400+ covers.
