To understand the hospitality industry from every angle in particular restaurants and bars, I took up a job at Montpeliers. I worked briefly as a waiter but then as a key holder, staff trainer and manager. Through this I developed an understanding of different types of customers and how to deal with them in different stages of inebriation. When working as a manager I was able to consistently reduce the spend on staffing by improving the effectiveness of the team. I developed an effective team by being firm but fair and encouraging good team moral in every area of the business.

I was also in charge of staff training, health and safety training and creating recipes. I helped open the second unit in Fountainbridge. This involved designing the kitchen and food menu, hiring staff and purchasing appliances and kitchenware.

I worked temporarily as a Swedish-speaking tour manager where I was responsible for 50 guests, showing them around the UK and Ireland. The job required me to plan and organise weekly itineraries, arrange travel times and routes, whilst ensuring hotels, meals, excursion tickets and local guides were booked. I provided the guests with information whilst travelling thorough the countries, and helped translate the local guides, that allowed the guests a full experience and enjoy the UK’s and Ireland’s social, cultural, and historical highlights.There were many places to visit in a short space of time, and it was essential to come up with quick solutions when dealing with late, unhappy and/or ill guests to keep the time and the momentum of the tour going.
