Goodfella’s Sports Bar, Ramee Rose Hotel, DubaiIn my current role, I am in charge of a small team of bar tenders. I am also responsible for the entirestaff rota, the ordering of wet stock, and the implementation of staff incentives to encourage the up-selling and cross-selling of products.

In this role I was responsible for the day-to-day running of the bar, in charge of creating andimplementing new promotional ideas and trusted with calculating and recording daily revenues.

My duties in this role included washing & dressing the residents, feeding them, helping them tomobilise themselves and assisting with their overall comfort. I also obtained level 5 Fetacqualification in “Care Of The Elderly”.

Mulligan’s Cocktail Bar, LanzaroteThis was a very demanding role in what was the premier venue in a lively resort. Due to the broadrange of nationalities that would frequent the bar, I ensured that the drinks, food and entertainmentwere authentic enough to remain Irish, but diverse enough to appeal to all.
