Gryllies works to incorporate future-friendly protein into the North American diet to lessen the impact of our eating habits. We do this through the extraordinary ingredient of ground crickets. Our goal is to provide a healthier and more environmentally sustainable way to continue to enjoy meat dishes. Elizabeth co-founded Gryllies with four fellow students out of a shared interest in food security who wanted to help reduce the environmental impact of raising livestock. Starting Gryllies is what really sparked Elizabeth's passion for entrepreneurship. She helped launch the product from conception and gained invaluable experience. Gryllies won first place and $30,000 at the Queen's Innovation Connector's Pitch Competition in August 2015.

The Next 36 is a national entrepreneurship program for Canada’s most promising entrepreneurs. The program includes top tier academic instruction by faculty from Harvard Business School, Wharton, MIT, and Rotman. Students are paired with CEO’s and entrepreneurs from Canada’s leading companies and are given up to $50,000 seed capital to launch their businesses. The founding patrons of The Next 36 are Galen Weston, Jimmy Pattison, and The Honorable Paul Desmarais and national sponsors include TD Bank, Ernst & Young, Mastercard and Rogers Communications.

The Queen's Solar Design Team is currently constructing a fully autonomous home at Queen's University. While they have previously made net-zero and net-positive energy homes, the QSEC (Queen's Solar Education Center) will function completely off-the-grid using a wide array of advanced technologies. The house will serve as a space in which Queen's engineering students can test a variety of green building technologies under the supervision of Dr. Stephen Harrison.As Civil Manager Elizabeth's primary task was to design and implement a rainwater catchment, treatment and distribution system. Working in a multidisciplinary team she was able to creatively design a system that minimized water waste and met drinking water standards.In addition to her technical role she also assisted with the education and outreach program, teaching children about solar design and sustainable building practices.

Queen's School of Business is one of the world's premier business schools, with a faculty team renowned for its academic credentials and business experience. The School has earned international recognition for its innovative approaches to business education and has been a pioneer in the areas of team-based and experiential learning.Elizabeth served as a member of the Client Experience Team for the Executive Education program. She gained experience in customer service as well as administration. Her primary role was to assist in the planning and logistics of running enrichment programs for students.
