This project allowed me to gain experience using ELISA assays by testing gluten concentrations in final beer products after protocol manipulation of different variables such as pH, temperature and mash boiling time.The other project was a paid position as an undergraduate researcher working on "Dry Hopping Versus Steam Distilled Essential Hop Oils and Their Impacts on the Final Aroma, Flavor, and Essential Oil Composition of Beer". Performed sensory experiments for statistical analysis through in person sensory panels and SPSS software. Compared the chemical profiles of dry hopped versus oil addition final beer products using Solid Phase Microextraction (SPME) and GC-MS for identification/quantification of aroma producing compounds.
