Participated in a 6-month rotational internship in the Food & Beverage department of the hotel. Over the course of the internship, training was performed in three of the hotel's various outlets: Pierre (a 1 Michelin-starred French molecular fine dining restaurant), Mandarin Grill + Bar (another 1 Michelin-starred fine dining restaurant and bar), and the Baking and Pastry Department. In each outlet, classical and modern French cuisine techniques were taught, emphasis on HACCP protocols were strictly enforced, and a strong understanding of Back of House operations was established. In addition, exposure to catering was achieved during Audi's public unveiling of the 2014 A8 sedan with off-site catering provided by the Mandarin Oriental's Food and Beverage team.
