I began in the field of quality control for flour-based foods and food additives, where I developed advanced skills in analysis and control protocols. I focused on critical parameters such as fats, proteins, carbohydrates, dietary fibers, ashes, viscosity, rheology, texture analysis, BLOM Grade, SAG Grade, and °BRIX, employing both laboratory techniques and chemometric multivariate approaches.In the past three years, I have led impactful projects to valorize by-products of carob (Ceratonia Siliqua), helping my company successfully launch innovative carob syrups, SYFRUIT 80 and SYFRUIT 65.I developed an innovative and sustainable extraction process to harness the plant matrix for polyphenol extraction, sugar recovery, and other applications—all without the use of chemicals.
