Hi there! I’m Maddy Scott, a Nutrition and Dietetics student at Appalachian State University, graduating in May 2025. I’m passionate about using nutrition to create healthier futures and happier hearts. Maternal and pediatric nutrition has always fascinated me, how the right support during those early stages of life can make such a vast difference.As a Student Assistant to a Sports Dietitian for Olympic Athletics at AppFuel, I’ve learned how to assist and educate athletes on nutrition that can support at their best performance. During my internship at Enhance Nutrition, I explored another side of dietetics, shadowing and working on resources to support individuals overcoming disordered eating/eating disorders. Each of these experiences has shaped my perspective and made me even more excited for my future in nutrition. Beyond academics, I have gained customer service and leadership experience, having worked as a Prime Student Ambassador, a barista at Blue Deer Cookies, and a team member in various service industries. These experiences have honed my skills in communication, teamwork, and fostering positive environments.In the short term, I hope to continue working towards my RDN credential through an MS/DI program and gain a wide variety of experience inside and outside of the classroom. My vision is to see families embrace a joyful and balanced approach to nutrition, free from the pressures of diet culture. My mission is to provide education, counseling, support, and evidence-based strategies that encourage mothers and kids to make nutritious choices that fuel their bodies and spirits!I am so excited to keep learning, growing, and finding ways to contribute to making this world a healthier place!
