My thesis focuses on product development and evaluation of the products at hand. My main task is to determine if the coatings used in ESL milk cartons can be replaced without affecting the shelf-life, organoleptic properties or overall quality of the milk. This is done by comparing the test product with a reference product biologically, organoleptically(triangle testing and sensory panels) and chemically ( SPME/DHS GC-MS) after 28 and 45 days of storage as well as creating a baseline at production day.
