I am working on new product development (NPD) for the dairy sector to design high-added value dairy foods which contribute to a sustainable health. In our group we focus on the sensory analysis of the products developed, which are evaluated both by a trained sensory panel and by consumers.

I am currently working with by-products from wine and coffee industries, facing the challenge of developing new formulations with healthier properties and good sensory acceptability. My challenge is to reduce food waste while creating new opportunities in the food market!Methodologies:Sensory science: hedonic and consumer analysis using Check-all-that-apply (CATA), Just-about-right (JAR) scales, 9-point hedonic scales, panel training for dairy products, quantitative descriptive analysis (QDA).Product bioactivity: in vitro antioxidant capacity methods (ABTS, DPPH, ORAC, physiological ROS formation in cell cultures), antidiabetic properties (alpha-glucosidase inhibition) and anti-inflammatory properties (NO production in cell cultures).Technological stability: shelf-life characterization for microbiological, textural and physicochemical characteristics.
