The associate is trained to produce cuts of meats from USDA tender verified beef, delicious tender pork and chicken. Other cuts include lamb and veal. Successful completion of the program includes hands on demonstration of learned skills, testing every four weeks and final testing of learned skill throughout the program by the district lead meat specialist.
