La Mer Restaurant at Halekulani HotelResponsible for the preparation of fish appetizers and entrees in a fine dining, five star restaurant. Preparation of stocks, sauces, fish fabrication, and garnishes for the fish station. Ensuring proper storage, rotation, and health and safety of all food items. Clean equipment and stations to ensure proper sanitation.Member of Employee Health Committee.

Responsible for the preparation of food for a 75-seat fine dining restaurant. Relief Cook for multiple stations including pantry, grill, sauté, etc. Assist banquet chef with the preparation of multiple events up to 130 people. Ensuring proper storage, rotation, and health and safety of all food items.

Responsible for the dining preparation for a 50-seat French/American bistro-style restaurant. Ordering of fresh foods and basic kitchen supplies in conjunction with daily production. Receiving of delivered food items, verifying invoices for quality and quantity and striving for the finest products at the best possible cost. Conduct monthly food inventories and monitor food costs. Assure maintenance of kitchen equipment, keeping it clean, safe, and in operable condition.
