About Mark Hellyar

The past ten years have been spent in key roles for two James Beard Award winning restaurant groups. Working and living in Japan has been the most impactful aspect as a chef and creator. My time with one of Americas most dynamic groups has resulted in being able to make an impact far beyond that of the kitchen and into overall development and improved daily operations. My projects have included the development of Momotaro Chicago from scratch, being in a key role in the development of Le Diplomate, opening Makoto, Miami and several others. Currently, I am in a multi unit role developing teams and working together to achieve new highs in all aspects.
