I was responsible for the complete operations, mobilization of all the camps on the Saipem Oil $ Gas Pipeline running from just north of Roma and ending on Curtis Island. There were 4 main camps on the pipeline with an occupancy of 700 tenants and 3 fly camps of 150 each. I drew up all cycle menus with costing, purchased all equipment and vehicles for the entire project. I also employed all the staff for the camps. Once the camps were up and running, I passed the project onto the Project Manager and then moved onto Mining in Emerald/Blackwater. Here I ran Bluff Village for a number of mines. I was also involved in a number of other mining project, demobilization and helping out the other Operations Managers. I was also responsible for all HSE standards and processes.

Al Khobar, Saudi Arabia

I did the complete setup of the Prince Mohamed Bin Fahd University before the grand opening. The project comprised of two 300 seater restaurants and two full scale coffee shops. We also did a lot of in house and outside catering. I did the complete menu compilation, costing, full profit and loss reconciliation, health and safety and completed the HACCP Certificate for all the projects. My major responsibility was to train the staff who came without any experience and get all systems and processes operational. Once the project was running smoothly, I moved to the Oil & Gas Sector to run a number of oil rigs in Bahrain. This was working directly with the clients and monitoring safety and food quality. I was also responsible for all staff facilities and housing.

Amman, Jordan

Zad had the largest central kitchen in the Middle East at the time that I was there and produced 27,000 meals per day to all military camps throughout Jordan and I was in charge of all operations. I controlled all food production and logistics to the camps which in some cases were 600km away and were fed 3 meals per day. I had to regularly visit these camps almost daily, train staff, making sure all the camps ran successfully.I was the leader of the HACCP team and successfully implemented the process into the company. We also had a number of corporate projects for major companies like Orange Mobile Communications and a number of hospitals. I had a team of project managers who spent all their time at the projects.
