Following a gluten-free diet can feel similar to being trapped on a remote island. We miss the simple things—a hot shower, a cold beer and well, yes PIZZA. For those of us who deal with this in our daily life, you know what I mean. We begin to obsess about our old favorites. In 2003 my family and I started a gluten-free diet. Pizza was the food my family and I longed for most. After trying several messy mixes from the market that were not only expensive, time consuming and fell short in the nutrition department, I thought there had to be a better way. By the summer of 2007 I set out to create a nutritious and delicious prepared pizza crust for families and health conscious people on-the-go. To most, it seemed like a crazy idea. “What is gluten?” and “Why should I avoid it?”. I pressed on knowing that I had a great idea and people would catch on. My family and I could not be the only ones with food intolerances and allergies.My journey for optimal health through nutrition has led to my exploration of this new destination we call Toovaloo. Today, I am happy to report, my family and friends have discovered a new, wonderful way of eating and many new favorites.
