FIELD: Artisan production of sweets, pralines and ice cream.CURRENT TITLE: chef and production manager. On a bi-weekly base I manage the bakery production according to season and market request. I manage a small team of apprentices who help me to bake cakes, cookies, mousse cakes, savoury products ( pizza and sandwiches ), brioches and croissants ( with mother yeast ), seasonal products ( ice-cream, chocolate ), I take care of products ordering, ingredient sourcing, of the relationship with our suppliers, of the labelling of products according to law requests, of the respect for HACCP regulations, of the creation of new recipes and supervision of tidiness and cleanness of the spaces, sanitation of machinery/rooms/kitchen management.
