About Matthew Amicucci Ph.D.
Food has always been of interest for me. I spent about a decade cooking in restaurants while putting myself through culinary school. However, I found my curiosity was positioned somewhere at the intersection between cooking, food science, and health, which lead me to pursue a bachelors degree in Food Science and Technology and eventually a PhD in Agricultural and Environmental Chemistry. During this time I performed research on the relationships between carbohydrates, the gut microbiome, and human health. Now as a Co-Founder and VP of R&D at one.bio, I lead a team to explore how distinct carbohydrate structural attributes can modulate certain members of the gut microbiome, with the aim of creating products that will enhance health.
