Assisting the Executive chef of a large 569 room flag ship property with four dining outlets, horizon club and 6 meeting rooms with a banquet hall catering up to 2500 covers. Being fully responsible for ongoing menu changes, banquet set ups and outside caterings for up to 1200 covers. We had the pleasure to cater to the likes of the Apple production warehouse, and the Shenzhen wedding shows. Leading a team of 140 chefs we successfully closed the year on 35% food cost whilst the hotel ran at 95% occupancy for the year.
